an additional 60 g of melted butter for brushing the layers
a little rice flour for rolling
For the apple filling:
550–600 g peeled and cored apples
2 sachets of vanilla sugar
2 tablespoons of sugar
2 tablespoons of cinnamon
To finish:
powdered sugar as desired
Instructions
First, prepare the filling. Grate the apples, add the sugar and vanilla sugar, and simmer in a pan until they release their juices and most of the liquid has evaporated. Then, let them cool completely.
Meanwhile, prepare the dough. Pour the warm water into a bowl, add 60 g of melted butter, and then the Premium Mix. Knead the dough on a surface lightly dusted with rice flour and divide it into 4 equal balls.
Roll each ball out to about the size of a small plate. Brush the first layer with melted butter, place the next one on top, and repeat the process until all four layers are stacked.
Cover the dough with plastic wrap or place it in a bag and refrigerate for 30–60 minutes.
Roll the chilled dough out very thinly. Spread the cooled apple filling over it, fold the edges inward, and roll it up into a strudel. Brush the top with the remaining melted butter.
Bake at 220 °C for approximately 35 minutes, or until the strudel is nicely golden brown.
Let it cool slightly before slicing and sprinkle with powdered sugar if desired.
