Prepare the mousse: Meanwhile, prepare the chocolate mousse. Whisk 400g of the mix with 480ml of cold milk until fluffy and thick. Pour the mousse over the cooled sponge cake and place it in the baking dish.
Chill: Refrigerate everything for about 3 hours to allow the mousse to set nicely.
Finish: Carefully trim and separate the cake from the baking dish. Decorate the top as desired with dark chocolate spread.
