Have you heard of the dish PASTA ALLA NORMA?
It comes from Sicily and is named after an opera. Mmm, no wonder it was named "DISH OF THE YEAR" in 2018.
For us personally, this is definitely the best pasta where you don't miss meat.

Preparation time: approximately 20 minutes
Difficulty: Low
Servings: 4 people

Ingredients:

  • 1 package of GLUTENO penne
  • 2 canned peeled tomatoes
  • 2 cloves of garlic
  • 1 small eggplant
  • feta cheese - for sprinkling (omit for a vegan version)

Method:

  1. Cut the eggplant into cubes approximately 0.5 – 1 cm.
  2. Finely chop the garlic.
  3. Cut the canned peeled tomatoes into 4 pieces.
  4. Sauté the eggplant cubes in a hot pan with oil. Then transfer them to a bowl.
  5. Then, in the same pan, sauté the garlic. When it turns golden, add the peeled tomatoes and then stir in the sautéed eggplant.
  6. Add the cooked pasta, mix, and sprinkle with feta cheese and a few drops of olive oil.
  7. Enjoy your meal!
