Sugar-free TIRAMISU biscuits

Difficulty: Low

 

Ingredients:

  • 1 mix for shortcrust pastry and cocoa cookies
  • 100g butter or coconut oil
  • 2 eggs
  • espresso

Protein cream: 

  • 200g skyr
  • 1 tbsp mascarpone cheese
  • 1 scoop vanilla protein
  • sweetener to taste
  • cocoa powder

Instructions:

  1. Mix the cookie mix with butter or coconut oil and eggs. 

  2. Shape cookies from the dough and place them on a baking sheet lined with baking paper.

  3. Bake them for 12 minutes at 180°C. Immediately after baking, brush or lightly pour hot espresso over them. Leave them on the baking sheet to cool completely. 

  4. Meanwhile, prepare the protein cream. Mix all ingredients and add sweetener to taste. 

  5. Decorate the cookies with cream and sprinkle with cocoa.
