BUCKWHEAT PASTA WITH SALMON AND SPINACH

Creamy buckwheat pasta with smoked salmon, fresh spinach, and Parmesan, refreshed with lemon zest – quick, delicious, elegant, and rich in fiber.
 

Preparation time: approx. 20 minutes
Difficulty: Low
Servings: 2-4 people

Ingredients:

  • 1 package of GLUTENO buckwheat pasta

  • 2 cloves garlic (finely chopped)

  • 100g smoked salmon, cut into pieces

  • 100g fresh spinach

  • 50ml white wine

  • 1 tablespoon lemon juice

  • 100ml cooking cream

  • 30g grated Parmesan cheese

  • Salt and freshly ground black pepper to taste

  • Zest of 1/2 lemon


Instructions:

  1. Heat a little olive oil or butter in a pan. Add the finely chopped garlic and sauté it over low heat just until fragrant – be careful not to brown it.

  2. Add the salmon pieces and fresh spinach. Cook until the spinach wilts and the salmon slightly changes color.

  3. Pour in the white wine and let the alcohol evaporate (about 2-3 minutes).

  4. Add lemon juice, cooking cream, and salt and pepper to taste to the pan. Mix everything well.

  5. Add the grated Parmesan and stir until it melts, forming a creamy sauce.

  6. Cook the buckwheat pasta according to the package directions and stir it into the sauce. If necessary, add a little of the pasta cooking water if the sauce seems too thick.

  7. Divide the pasta onto plates and sprinkle with grated lemon zest for freshness.
