Ingredients:
For the dough:
100 g bread and pizza mix
70 g GLUTENO oat flour
100 g butter
1 egg
30 g powdered sugar
For the filling:
5 pears
150 ml heavy cream
2 eggs
1 egg yolk
20 g sugar
2 vanilla sugars
apricot jam
Preparation
Dough:
Mix both flours and sugar, add butter and egg, and quickly knead into a smooth dough. Form a ball, wrap it in foil, and refrigerate for 30 minutes.
Pears:
Peel the pears, cut them in half, remove the seeds, and slice them thinly. Keep the slices together in the shape of halves.
Preparing the mold:
Grease the pie dish with butter. Roll out the dough between two sheets of baking paper and place it into the mold with the paper. Remove the top paper and trim any excess edges. Bake for 10 minutes at 180 °C.
Topping:
Beat the eggs, egg yolk, sugar, and vanilla sugar until fluffy. Add the heavy cream and mix well.
Assembly:
Arrange the pears on the baked dough, pour the topping over them, and bake for approximately 50 minutes at 180 °C.
Finish:
Remove the pie from the oven, spread apricot jam over the surface, and bake for another 10 minutes at 200 °C until golden brown.
