Red lentil pasta with spinach pesto

A dish rich in protein and iron, suitable as a light side dish or a complete main meal.

 

Preparation time: 30 min 
Number of servings: for 4 people as a side dish or for 2 people as a main course

Ingredients:

– 1x 100% red lentil GLUTENO pasta 
-100g fresh spinach
-1 clove roasted garlic (roast for approx. 30 min at 180°C)
-100g roasted almonds
-A handful of grated Parmesan cheese
-1 lime
-Olive oil
-Salt, pepper to taste
 

Instructions:

  1. Preparation:
    • Cut off the top of the garlic bulb so that all cloves are visible. Drizzle the garlic with a little olive oil and salt. Roast for approx. 30 minutes at 180°C.
    • Blend all pesto ingredients, adding a little water if necessary to achieve the desired consistency. Season with salt and pepper to taste. 
    • Cook the pasta for a maximum of 3 minutes, then rinse it under warm or cold water (for a cold or warm dish) and mix with the pesto.
  2. Serving:
    • You can add lime and Parmesan cheese on top. 
    • Serve as a cold side dish, as a salad, or as a warm main course.
