Bring water to a boil in a large pot. Cook the pea pasta for only 1 minute – it should still be firm.
Heat a little olive oil or butter in a pan. Add the finely chopped shallot and sauté gently.
Pour in 400 ml of milk, add half of the grated cheddar, a teaspoon of mustard, thyme, and a pinch of salt. Stir until the cheese is completely melted and a thick sauce forms.
Transfer the pasta to a baking dish. Spread the cauliflower evenly over the top. Pour the sauce over and sprinkle with the remaining grated cheddar.
Bake in a preheated oven at 200 °C for about 20 minutes, until a golden-brown, crispy crust forms on top.
