Baked Cheddar and Cauliflower Pasta

A protein-rich dish, suitable as a light side dish or a complete meal on its own.

 

Preparation time: 30 min 
Servings: 3-4 people

Ingredients:

  • 250 g pea pasta
  • 1 small shallot
  • 400 ml milk (any kind)
  • 150 g cheddar cheese (half for the sauce, half for sprinkling)
  • 1 teaspoon mustard
  • ½ teaspoon dried thyme
  • a pinch of salt
  • 100 g cauliflower (small florets)
  • a drop of olive oil or a knob of butter for sautéing

 

 
 

Instructions:

  • PASTA: 

Bring water to a boil in a large pot. Cook the pea pasta for only 1 minute – it should still be firm.

  • SAUCE:

Heat a little olive oil or butter in a pan. Add the finely chopped shallot and sauté gently.

Pour in 400 ml of milk, add half of the grated cheddar, a teaspoon of mustard, thyme, and a pinch of salt. Stir until the cheese is completely melted and a thick sauce forms.

  • Assembly:

Transfer the pasta to a baking dish. Spread the cauliflower evenly over the top. Pour the sauce over and sprinkle with the remaining grated cheddar.

  • Baking:

Bake in a preheated oven at 200 °C for about 20 minutes, until a golden-brown, crispy crust forms on top.
