240 g GLUTENO chickpea flour
260 g GLUTENO bread and pizza mix
200 g butter
2 vanilla sugars
2 eggs
120 g honey
½ teaspoon ginger powder
1 teaspoon cinnamon
½ teaspoon clove powder (optional)
a pinch of salt
150 g powdered sugar
1 egg white
1 tablespoon lemon juice
Dough: Knead all dough ingredients thoroughly into a homogeneous mass.
Rolling and shaping: Roll out the dough to about 5 mm thick and cut out desired shapes with cookie cutters.
Baking: Bake in a preheated oven at 180 °C for about 20 minutes.
Cooling: Let the gingerbread cool completely.
Glaze: In a bowl, mix the egg white, powdered sugar, and lemon juice. Beat until you get a thick, shiny glaze.
Decorating: Dip the cooled gingerbread into the glaze or brush it on.
Drying: Let the glaze harden (about 30 minutes).
