CHICKPEA GINGERBREAD COOKIES

Dough Ingredients

  • 240 g GLUTENO chickpea flour

  • 260 g GLUTENO bread and pizza mix

  • 200 g butter

  • 2 vanilla sugars

  • 2 eggs

  • 120 g honey

  • ½ teaspoon ginger powder

  • 1 teaspoon cinnamon

  • ½ teaspoon clove powder (optional)

  • a pinch of salt

White Glaze Ingredients

  • 150 g powdered sugar

  • 1 egg white

  • 1 tablespoon lemon juice

Preparation Instructions

  1. Dough: Knead all dough ingredients thoroughly into a homogeneous mass.

  2. Rolling and shaping: Roll out the dough to about 5 mm thick and cut out desired shapes with cookie cutters.

  3. Baking: Bake in a preheated oven at 180 °C for about 20 minutes.

  4. Cooling: Let the gingerbread cool completely.

  5. Glaze: In a bowl, mix the egg white, powdered sugar, and lemon juice. Beat until you get a thick, shiny glaze.

  6. Decorating: Dip the cooled gingerbread into the glaze or brush it on.

  7. Drying: Let the glaze harden (about 30 minutes).
